What you need
Ingredients
- 2 cups cream
- 1/2 cup sugar
- 5 yolks
- 1 vanilla bean
- Pinch salt
- Sugar to torch
- Berries to garnish
How to cook it
Method
- Heat cream with vanilla until just below boil.
- Whisk yolks and sugar; temper cream in slowly.
- Pour into ramekins; water bath bake at 325F.
- Chill, dust with sugar, torch to glassy crust.
