Ingredients

  • 2 cups cream
  • 1/2 cup sugar
  • 5 yolks
  • 1 vanilla bean
  • Pinch salt
  • Sugar to torch
  • Berries to garnish
How to cook it

Method

  1. Heat cream with vanilla until just below boil.
  2. Whisk yolks and sugar; temper cream in slowly.
  3. Pour into ramekins; water bath bake at 325F.
  4. Chill, dust with sugar, torch to glassy crust.
