Ingredients

  • 3 lb chuck
  • 6 oz lardons
  • 1 bottle burgundy
  • 3 carrots
  • 1 lb mushrooms
  • Pearl onions
  • Beef stock
How to cook it

Method

  1. Render lardons; sear cubed beef hard in batches.
  2. Sweat carrots; deglaze with wine and reduce.
  3. Return beef and stock; braise 2.5 hours at 325F.
  4. Saute mushrooms and onions; fold through to finish.
