What you need
Ingredients
- 3 lb chuck
- 6 oz lardons
- 1 bottle burgundy
- 3 carrots
- 1 lb mushrooms
- Pearl onions
- Beef stock
How to cook it
Method
- Render lardons; sear cubed beef hard in batches.
- Sweat carrots; deglaze with wine and reduce.
- Return beef and stock; braise 2.5 hours at 325F.
- Saute mushrooms and onions; fold through to finish.
