Ingredients

  • 2 sirloin steaks
  • 2 lb yukon potatoes
  • 3 yolks
  • 1 cup butter
  • Tarragon and shallot
  • White wine vinegar
  • Sea salt
How to cook it

Method

  1. Cut frites; blanch at 285F, then crisp at 375F.
  2. Make bearnaise reduction with vinegar, shallot, tarragon.
  3. Whisk yolks over heat; stream in clarified butter.
  4. Sear steaks hard; rest; serve with frites and sauce.
