Ingredients

  • 8 lb pork shoulder
  • 1/4 cup pork rub
  • 1/4 cup brown sugar
  • Apple cider
  • Apple wood
  • Yellow mustard
  • Sea salt
How to cook it

Method

  1. Coat shoulder with mustard and rub; rest overnight.
  2. Smoke at 225F until 165F; spritz with cider hourly.
  3. Wrap in foil with cider; cook to 203F probe-tender.
  4. Rest 1 hour, then pull warm with bear claws.
