What you need
Ingredients
- 8 lb pork shoulder
- 1/4 cup pork rub
- 1/4 cup brown sugar
- Apple cider
- Apple wood
- Yellow mustard
- Sea salt
How to cook it
Method
- Coat shoulder with mustard and rub; rest overnight.
- Smoke at 225F until 165F; spritz with cider hourly.
- Wrap in foil with cider; cook to 203F probe-tender.
- Rest 1 hour, then pull warm with bear claws.
