Ingredients

  • 12 lb brisket
  • 1/2 cup salt
  • 1/2 cup pepper
  • Oak wood
  • Mustard binder
  • Beef tallow
  • Pink butcher paper
How to cook it

Method

  1. Trim fat to a quarter inch; coat with binder and rub.
  2. Smoke at 225F until 165F internal; spritz hourly.
  3. Wrap in paper with tallow; cook to 203F probe-tender.
  4. Rest in cooler 3 hours; slice across the grain pencil thick.
