Texas Style Smoked Brisket
Salt-and-pepper brisket smoked low for 14 hours to a perfect bark.

What you need
Ingredients
- 12 lb brisket
- 1/2 cup salt
- 1/2 cup pepper
- Oak wood
- Mustard binder
- Beef tallow
- Pink butcher paper
How to cook it
Method
- Trim fat to a quarter inch; coat with binder and rub.
- Smoke at 225F until 165F internal; spritz hourly.
- Wrap in paper with tallow; cook to 203F probe-tender.
- Rest in cooler 3 hours; slice across the grain pencil thick.
