What you need

Ingredients

  • 2 racks spare ribs
  • 1/2 cup brown sugar
  • 1/4 cup paprika
  • 2 tbsp salt
  • Apple cider vinegar
  • Mustard
  • Honey
How to cook it

Method

  1. Remove membrane; coat ribs in mustard and rub.
  2. Smoke at 225F for 4 hours; mop hourly with vinegar.
  3. Wrap in foil with honey for the last hour.
  4. Unwrap, glaze lightly, set bark 15 minutes; slice and serve.
