Argentinian Skirt Chimichurri

What you need
Ingredients
- 2 lb skirt steak
- 1 cup parsley
- 3 garlic cloves
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 tsp red chili flake
- Sea salt
How to cook it
Method
- Mix chimichurri ingredients; rest an hour to bloom.
- Salt steak and grill over hot coals 3 minutes per side.
- Rest 8 minutes; slice across grain into ribbons.
- Spoon chimichurri thick over the slices.
