Cast Iron Mac and Cheese

What you need
Ingredients
- 1 lb cavatappi
- 3 cups mixed cheddar and gruyere
- 3 cups whole milk
- 3 tbsp butter
- 3 tbsp flour
- 1 cup sourdough crumbs
- Smoked paprika
How to cook it
Method
- Boil pasta one minute under al dente; drain and reserve.
- Make a roux with butter and flour, whisk in milk, simmer to thick.
- Off heat, stir in cheese until smooth; fold pasta in.
- Top with crumbs and bake at 400F for 15 minutes until golden.
