Cast Iron Mac and Cheese

What you need

Ingredients

  • 1 lb cavatappi
  • 3 cups mixed cheddar and gruyere
  • 3 cups whole milk
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 cup sourdough crumbs
  • Smoked paprika
How to cook it

Method

  1. Boil pasta one minute under al dente; drain and reserve.
  2. Make a roux with butter and flour, whisk in milk, simmer to thick.
  3. Off heat, stir in cheese until smooth; fold pasta in.
  4. Top with crumbs and bake at 400F for 15 minutes until golden.
