Ingredients

  • 1.5 cups almond flour
  • 3 pasture eggs
  • 1 cup buttermilk
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 1 cup wild blueberries
  • Pinch of sea salt
How to cook it

Method

  1. Whisk dry ingredients in one bowl and wet in another, then fold together until just combined.
  2. Heat a cast iron skillet over medium and brush with butter.
  3. Pour 1/4 cup batter per pancake; cook until bubbles set, then flip and finish 90 seconds.
  4. Stack with extra blueberries and a thread of warm syrup.
