Ingredients

  • 2 lb chicken thigh
  • Bamboo skewers
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 2 tbsp sugar
  • Scallion
How to cook it

Method

  1. Soak skewers; thread chicken with scallion pieces.
  2. Reduce sauce ingredients to a syrup.
  3. Grill over hot coals, brushing with sauce repeatedly.
  4. Finish with shichimi and a final glaze.
