  • 3 lb pork bones
  • Pork belly chashu
  • 4 ajitama eggs
  • Fresh ramen noodles
  • Scallions, nori
  • Garlic, ginger
  • Tare seasoning
How to cook it

Method

  1. Boil bones hard 12 hours, skimming, until creamy white.
  2. Braise pork belly in soy mirin and sake; slice.
  3. Soft-boil eggs and marinate in tare 4 hours.
  4. Boil noodles, build bowl with broth, toppings, scallions.
